If you are looking for a quick side or snack that’s healthy too, try these Quick Kale Chips.   Anytime I’m at the store my kids ask for kale; yes, you heard that right they love kale chips. My kids even like to help prepare them because they are so simple to make.  We add kale chips as a side to a meal and even make them for a standalone snack.  One reason I love kale is because it has so many health benefits. For every 1 cup of Kale you will find1:

  • Nearly 3 grams of protein in one cup
  • 2.5 grams of fiber (which helps manage blood sugar and makes you feel full)
  • Vitamins A, C, and K
  • Folate, a B vitamin that’s key for brain development
  • Alpha-linolenic acid, an omega-3 fatty acid.
  • Lutein and zeaxanthin, nutrients that give kale its deep, dark green coloring and protect against macular degeneration and cataracts Minerals including phosphorus, potassium, calcium, and zinc

Recipe:

Prep Time: 5 mins     Cook Time: 15-20 mins

400 degrees

8 cups Kale

1 TBS Olive oil 

1/2tsp Sea Salt or to taste (I prefer Celtic Sea Salt)

Directions:

Pour kale on a cookie sheet. Remove steams and tear the larger pieces into smaller sections. Then drizzle with olive oil and salt. Next, toss with your hands. Place in the oven for 15-20 minutes at 400 degrees.  Time may vary based on your oven. You don’t want to burn the kale but limp under cooked kale is not a crowd pleaser.

Serve the Kale as a side or just for a snack.  This quick kale chips recipe is a favorite at our house, even with the kids.
