One Sheet Pan Meal: Sausage and Vegetables

Are you looking for an easy dinner to make with little hassle and clean up? How about a one sheet pan meal? After looking at other recipes, I created this easy dinner with what my family would actually eat. The best part is little clean up! And this will even count for keto, paleo or whole 30!

Ingredients

  • 1- 12oz (4-link pack) precooked Kiolbassa sausage (garlic, pork, turkey, or beef available); I used garlic sliced into ½” rounds
  • 1- med/lg bell paper (yellow, red, or green) diced into bite size pieces
  • 1 -small onion quartered (or cut smaller if desired)
  • 1-bunch of asparagus cut into smaller pieces
  • 2-3TBS of olive oil
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1tsp garlic powder
  • 1 tsp kosher salt, or to taste
  • ½ tsp ground black pepper or to taste
  • Freshly grated parmesan cheese, optional garnishing (I did not add)

Directions

  1. Preheat oven to 400F
  2. Line a cookie sheet with foil for easy clean up. Add the sausage, bell peppers, onion, and asparagus.  Drizzle with olive oil and toss on the pan.  Spread evenly across the pan and do not pile for even cooking.
  3. Evenly sprinkle oregano, parsley, garlic, salt and pepper
  4. Bake for 30 minutes or until the vegetables are tender. After about 15 minutes of cooking turn the vegetables for even cooking.  Because ovens vary check your meal after 30 minutes for desired doneness.
  5. Optional serve with parmesan cheese or over rice.
