How To Make Crockpot Charro Beans: An Easy Crockpot Recipe
Looking for an easy Crockpot meal? This Charro Bean Soup is a family favorite. The best part is little clean up!
Charro Bean Soup can be made to compliment a meal or as a stand-alone meal. You will find a crock pot full of Charro Bean Soup any time we have family over for fajitas; watch out though, my brother in-law with fight you for the beans. Other times I will make the Charro Bean Soup and serve it with cornbread as a complete meal. The next day it’s great with some Kielbasa sausage mixed (I prefer their garlic sausage links).
Ingredients
- 1lb bag of dried pinto beans
- 6 cups of water
- 4 slices of bacon (cut into pieces)
- ½ small onion diced into small pieces
- 3 green onions cut into small pieces
- 2 small tomatoes diced, or cherry tomatoes sliced in halves
- 1tsp fresh garlic minced (or substitute 1 tsp garlic powder)
- 1 tsp of chili powder
- 1 tsp kosher salt, or to taste
- ½ tsp ground black pepper or to taste
- Freshly grated Parmesan cheese, optional garnishing (I did not add)
Directions
- Take dried beans out of the bag and sort through them making sure there are not any little rocks that are in your beans. After all nobody wants rock soup. After sorting the beans put them in your crockpot and cover with water. Let the beans soak overnight. In the morning drain the water and add 6 cups of water to the beans. - Add the remaining ingredients and stir
- Cook on high for 8 hours in the crockpot.
***Optional serve with cornbread, sausage or top with cheese or sour cream.***
